We saw the rise of the home cook in recent years and now consumers can use cooking as a budgeting device. Social media channels like TikTok and Instagram inspire popular air fryer recipes, one-pot wonders, and BBQ masterpieces, allowing consumers to reinvent the cooking wheel. Unsurprisingly, we are also seeing greater attention paid to microwave meals and prepared foods. Bland, heavily salted meals are no longer the status quo, and consumers are opting for healthy and deeply delicious meals that are abundant in flavour and suit the price-conscious consumer.

Consumers can’t get enough of all things umami, and gaining momentum is Umami 3.0 – bigger, bolder and layered levels of umami, playing with mouthfeel and pushing the boundaries. This resurgence of umami can be attributed to consumers searching for deliciousness in every dish. Chefs and product developers are experimenting with lesser-known umami-rich ingredients like kombu. Expect to see these feature in unexpected products and dishes, from cocktails to sweet treats, rethinking the status quo.
And while we see innovation in umami, we can’t forget the traditional umami-maximisers like tomato and mushrooms which help elevate moreishness to the next level.

A core result of this is the ever-expanding chilli industry. Things are heating up, and as world chillis like gochugaru and Aleppo fall into the everyday foodie lexicon, space is made for other regional chillis to have their moment in the sun. South American habanero and Peruvian lemon drop offer authentic fiery heat, whilst mellow ancho, pasilla, and guajillo add depth and take consumers on a journey around the globe.

Authenticity will be key in world flavour; well-known cuisines will be investigated further to reveal regionally celebrated dishes.

Crafted to satisfy the growing trend of Umami 3.0, this dish is designed to deliver deep, savoury flavours that captivate the palate. The beef rendang, slow-cooked with fragrant galangal, lemongrass, kaffir lime, and tamarind, offers an intense, flavourful taste experience. Meanwhile, the mushroom umami aioli adds a creamy, earthy depth, layering umami powerhouses for a bolder flavour and perfectly balancing the richness of the rendang. Pickled vegetables offer a refreshing crunch, enhancing the overall taste with a tangy contrast. Our banh mi interpretation is designed to delight and satisfy the umami cravings of today’s discerning food lovers, allowing them to explore the dynamic flavours of Southeast Asia.
Tamarind Powder: Typically tangy and slightly sour, tamarind powder can be used in seasonings and toppers, or easily dissolved to bring bright flavour notes to soup, sauces, and gravies.
Red Miso Powder: Encompassing sweet, salty and savoury notes, red miso acts as a natural flavour enhancer, emphasising ‘meatiness’ in dishes and promoting a more savoury and heartier taste.
Shiitake Powder: Umami powerhouse shiitake acts as a fantastic natural MSG replacer, boosting savoury notes and adding depth and complexity to existing flavours.
Lemongrass Powder: This ingredient is a pantry staple in Southeast Asian cuisine, contributing a strong zingy and citrusy flavour.
Beef Rendang: Described as extravagantly delicious and the king of curries, this classic Malaysian powerhouse seemed the perfect centrepiece, with gorgeously aromatic notes of lemongrass, kaffir lime, galangal, and tamarind.
Umami Aioli: Savouriness is maxed out in this umami-rich aioli. Miso, seaweed, and shiitake extract powders are all powerful flavour enhancers, offering deeply savoury and meaty notes, adding layers of flavour and supporting the aromatics in the rendang.
Soy, Gluten from Wheat, Sulphites
A product of cross-cultural inspiration, these arancini are a savoury dream. Black Olive Pieces: Our Spanish black olive pieces are free from E numbers with a convenient 2-year, ambient shelf-life.
Red Bell Pepper Flakes: Riper and rarer than their green counterparts, they impart a vibrant red hue and signature fresh sweetness.
Porcini Mushroom Rice: Creamy and savoury with strong meaty notes, this vegetarian risotto base is intensely rich and flavourful.
Red Pesto Mayo: A delicious alternative to Genovese pesto, our red pesto is vibrant and sweet from the combination of tomato and red bell pepper and given body with the addition of roasted garlic powder.
Egg, Gluten from Wheat, Milk
Increasingly seeking fiery culinary experiences, consumers want a little excitement to the dreariness of their day-to-day. Our triple threat tostadas are a Langdon twist on this classic Mexican street food, featuring fragrant pulled chicken and a classic jalapeño mayonnaise, elevated by a trio of unique toppers. Each topper draws inspiration from traditional recipes, designed to add vibrant flavour and customisable heat to the tostadas. Highlighting different chillies and culinary techniques, each topper takes consumers on a distinct flavour journey through Central and South America landscapes, with everything from smoky chipotle to zesty habanero, allowing consumers to customise heat to their preference.
Mexican Medley Chillis: Our range of pasilla, ancho, and guajillo chillis perfectly encapsulate the iconic flavour of Mexican cuisine, adding well-balanced heat with a complex flavour.
Habanero Chilli: Famously hot and a little fruity, habanero is known to be one of the spiciest chillis in the world. Crucially, their heat does not make them flavourless, with their fruity undertones complimenting heat.
Pineapple Powder: Naturally sweet, this powder eliminates the need for added sugar, making it a fantastic natural sweetener in food and beverage applications. Spray-dried fruit pulp results in an authentic and refreshing final product.
Spring Onion Rolls: A combination of both white and green particulates, this offers a mild yet slightly sweet vegetable flavour and packs a punch of intensity, adding depth and complexity to dishes.
Adobo Chicken: Our Mexican adobo marinade features the holy trinity of chillis (ancho, guajillo, and pasilla) lending deeply smoky notes.
Jalapeno Mayo: Green jalapeno carries a mild, earthy, slightly tangy flavour and paprika rounds out the flavour in this Mexican mayo.
Mild Topper: This mild, smoky, crunchy topper draws inspiration from Mexican corn elotes. Smoked paprika and naturally smoky chipotle add layers of smoked flavour and colour to this texturally dreamy topper.
Medium Topper: Hot and tangy, this topper has its roots in Orizaba Mexico and we have given it a Peruvian twist with the addition of fruity, citrusy lemon drop chilli.
Hot Topper: This bold and fiery topper is a dried seasoning version of authentic Mayan salsa, blending sweet pineapple powder with intensely hot and fruity habanero powder.

Culinary exploration is uncovering revered global flavours and traditional dishes that define indigenous food cultures. Britain, renowned for its cosmopolitan cuisine, has a history of adopting these diverse ingredients. One such gem is the orange-hued amba, a traditional condiment with roots in both Indian chutneys and achar, boasting a symphony of sweet, sour, spicy, and complex flavours. Our amba seasoning is showcased in a creamy cheesecake filling, but this versatile seasoning can elevate dishes as a marinade, meat rub, seasoning, or sauce. Complementing the unique filling is an orange and sage spiced crumb, bridging the sweet and savoury elements of authentic amba. This fusion blends flavours that honour tradition while embracing contemporary culinary creativity.
Mango Powder: Produced from fresh Totapuri mangoes, this authentic mango powder creates a harmonious balance of sweetness and acidity with great dissolvability.
Sage Powder: Aromatic, with a signature green colour, our dried sage has a pungent aroma with strong, slightly minty, musky flavours.
Orange Pieces: Made using 100% of the fruit, our orange pieces are all natural, clean-label, and contain no additives or fillers, perfectly capturing all the flavour and tang.
Cayenne Chilli: Our M&S A list chilli powder is steam-treated and of Indian origin with a medium to high heat level. Dose from 0.5% for a fiery chilli kick.
Amba Cheesecake Filling: This tangy, spiced, and sweet seasoning typically lends itself perfectly to Indian dishes both meat and vegetarian. Unbelievably versatile, it also shines in sweet applications.
Crumb: Sage and orange are the predominant flavours in the crumb, complimented by warming cinnamon and cardamom.
