From ‘Umami 3.0’ to ‘Around the World Flavour’, we delve into the different trends that are influencing food in 2024/25 and beyond.

We saw the rise of the home cook in recent years and now consumers can use cooking as a budgeting device. Social media channels like TikTok and Instagram inspire popular AirFryer recipes, one-pot wonders, and BBQ masterpieces, allowing consumers to reinvent the cooking wheel. Unsurprisingly, we are also seeing greater attention paid to microwave meals and prepared foods. Bland, heavily salted meals are no longer the status quo, and consumers are opting for healthy and deeply delicious meals that are abundant in flavour and suit the price-conscious consumer.

Consumers can’t get enough of all things umami, and gaining momentum is Umami 3.0 – bigger, bolder and layered levels of umami, playing with mouthfeel and pushing the boundaries. This resurgence of umami can be attributed to consumers searching for deliciousness in every dish. Chefs and product developers are experimenting with lesser-known umami-rich ingredients like kombu; Expect to see these feature in unexpected products and dishes, from cocktails to sweet treats, rethinking the status quo. 

And while we see innovation in umami, we can’t forget the traditional umami-maximisers like tomato and mushrooms which help elevate moreishness to the next level.

Spice up your life! The expectant consumer is demanding excitement and adventure in all aspects of their food, from the foundational ingredients to the most exciting. A core result of this is the ever-expanding chilli industry. Things are heating up, and as world chillis like gochugaru and aleppo fall into the everyday foodie lexicon, space is made for other regional chillis to have their moment in the sun. South American habanero and Peruvian lemon drop offer authentic fiery heat, whilst mellow ancho, pasilla, and guajillo add depth and take consumers on a journey around the globe.

Escapism is front of mind and food offers an opportunity to leave the worries of everyday life, with just one mouthful. Some use culinary techniques to escape and others seek flavour enhancers from sauces and seasonings, like Lebanese toum, Middle Eastern Zhoug or Mexican tajin.

Authenticity will be key in world flavour; well-known cuisines will be investigated further to reveal regionally celebrated dishes.

Air Fryer Ravioli

Seeking comfort and escapism, this Italian and British mash-up ravioli offers consumers the perfect balance of holiday and home fare. Black olive pieces packed with flavour and delicious saltiness, are lifted by the bright tang of lemon granules. Meanwhile, fragrant sage and onion season the pork filling for a global twist on a British classic. Knowledge surrounding the importance of gut well-being is challenging brands to create products that are not only good for the gut but also deliver on all-round deliciousness. Apple fibre pasta is a convenient way to increase fibre intake without drastic diet changes.

Apple Fibre: Containing 65g pure fibre per 100g, this 100% natural ingredient is neutral in flavour making it a powerful, unique addition with added nutritional benefits.

Dried Sage: Aromatic, with a signature grey-green colour,  our dried sage is a high-quality M&S-compliant product with low micro and steam-treated.

Black Olive Pieces: Preserved only with salt, these black olive pieces are E-number free and have a  2-year ambient shelf-life. Ideal for many applications as they do not bleed colour into the finished product.

Lemon Granules: Made with no additive, our lemon granules are made using the whole lemon and are a great clean-label acidity regulator.

Apple Fibre Pasta Dough: Blended and fortified with 100% natural apple fibre, our gut-friendly pasta dough is great source of fibre, making it an ideal choice for wellness-concerned consumers.

Sunday Roast Stuffing: Fragrant dried sage and flavoursome onion pieces are the heroes of this roast pork filling, reminiscent of a quintessential British Sunday roast dinner.

Citrus and Olive Pangratatto: Black olive pieces and lemon granules work in harmony to recreate the tastes of the Amalfi coast, sunny days and light, fresh Mediterranean cuisine.

Consumers are looking for convenient and customisable options to deliver on ‘deliciousness’. Umami ingredients and authentic seasonings are a speedy way to inject a little gastronomy into home cooking and level-up mid-week meals. A new wave of home-cooking and level-up mid-week meals. This vegetarian popcorn halloumi tossed in an umami crumb is designed for the air-fryer, and perfect for the time-conscious consumer. Our trio of dips takes you on a global flavour tour with classic Indian Chai, Mexican Chipotle, Middle Eastern Amba, and Korean Chilli…. it is flavour worth double dipping for.

Mango Powder: Produced from fresh Totapuri mangoes, this natural powder creates a harmonious balance of sweetness and acidity with great dissolvability.

Chipotle Powder: Hot, smoky and slightly sweet, our chipotle powder has a complex flavour with notes and adding depth and complexity to existing flavours

Shiitake Extract: Umami powerhouse shiitake acts as a fantastic natural MSG replacer, boosting savoury notes and adding depth and complexity to existing flavours.

Seaweed Extract: Seaweed acts as a powerful natural flavour enhancer, aiding in sodium reduction, and driving crave-ability.

 

Amba Mayo: Inspired by the pickled mango condiment from the Middle East, this dip delivers on regional authenticity so craved by consumers, with a kaleidoscope of sweet and spicy flavours. 

Chipotle Chai Mayo: This mayo carries the sweet and aromatic flavours of Indian chai spice, with Mexican chipotle adding a smoky depth of flavour.

Korean BBQ Sauce: Characteristically sweet and tangy, Gochugaru style chilli flakes nod to authenticity, providing minimal heat with bright visual inclusions.

All Tarted Up Shakshuka

As consumers continue their love affair with Middle Eastern cuisine, we look to modernise well-known favourites with lesser-known, ‘up and coming’, seasonings and blends. in line with the move towards quick cooking and easy meal preparation, this fiery zhoug sauce can be easily added to a whole host of different dishes to create a flavour fiesta with minimal effort, cutting through deeply savoury and meaty dishes. Green jalapenos give the zhoug sauce a vibrant green colour, and the depth of flavour is enhanced with our M&S A list spices. Our shakshuka lamb is sweet and sticky in contrast with the zingy, cheesy base. Leek and mustard effortlessly elevate the pastry base, calling on traditional building blocks of flavour, and adding an additional layer of punchiness.

Red Bell Pepper: Riper and rarer than their green counterparts, these granules impart a vibrant red hue and signature fresh sweetness.

Green Jalapeno Powder: With a medium heat of 2500-8000 SHU, green jalapeno powder contributes a sweet, earthy but bright flavour.

Leek Powder: One of the foundational vegetables in any stock or bouillon, leek powder adds a sweet and mildly oniony flavour.

Wholegrain Mustard (Wet): Adding instant heat and zing to dishes, this mustard contributes a tangy, peppery bite and subtle heat.

Lamb: Red Bell Pepper gives the sauce that signature shakshuka sweetness, balanced with sweet and spicy red jalapeno to awaken the tastebuds.

Sauce: A hero of Yemini cuisine, this verdant zhoug sauce can be incorporated into all sorts of dishes, bringing a fiery heat and an aromatic herbaceous flavour to meals.

Pastry: Leek and mustard powder work in harmony to add depth and zing to this cheesy shortcrust pastry.

Cocoa De Nata Delight

As consumers continue their search and obsession with retro dining and indulgence, we are seeing a renaissance of classic treats and desserts, featuring traditional recipes and cooking techniques. Café Cecilia in London is showcasing a fried bread and butter pudding with custard, and pubs and restaurants all over the UK are reviving the classic trifle. Creamy, flaky, buttery, and sweet, Pastel de Natas offer simple indulgence with a hint of escapism, being emblematic of Portuguese cuisine. Elevating this classic desert is cocoa fibre, lemon drop chilli, and ground rosemary, adding a source of fibre and earthiness to the pastry, and a citrussy, herbaceous heat to the custard.

Cocoa Fibre: 100% natural and free-flowing, cocoa fibre is made from the shells of cocoa beans, with 50-60g of fibre per 100g. The similar organoleptic properties make this a suitable substitute for cocoa at 1:1 ratio.

Lemon Drop Chilli: This Peruvian chilli has an immediate heat that lingers, with a SHU of 30,000-50,000. Lemon drop has a unique flavour profile with strong notes of sour citrus and mild notes of fresh lemongrass.

Rosemary: With a pine-like fragrance and earthy undertones, ground rosemary is used to add aromatic flavour without visual inclusions.

Pastry: With consumers looking for convenient health benefits in every bite, this cocoa fibre is the perfect addition to baked goods, with minimal impact on the taste and functionality.

Custard: Lemon drop chilli is a flavour powerhouse, adding a citrussy, floral heat that lingers on the tongue. Combine this with aromatic rosemary for an unusually addictive sweet and savoury filling.
